I’ve wanted to create a pumpkin oatmeal cookie recipe just like my perfect cookie oatmeal raisin cookie. The problem with pumpkin cookies is that they can sometimes end up caky. While caky cookies can be delicious, I wanted to create a cookie recipe that was soft and chewy just like an oatmeal raisin cookie.
The difference between oatmeal raisins cookies and pumpkin oatmeal cookies is we replace the raisins with chocolate chips and butter with pumpkin puree. Replacing the raisins and butter with chocolate chips and pumpkin puree makes this cookie the best fall cookie.
I have been on a gluten free diet for the past three years. I have had to replace all-purpose flour and wheat flour with rice flour, oat flour, and coconut flour. A lot of people suffer from eating too much flour and feeling sluggish all day long and there are people that just cannot digest flour and they feel sick and slows down their metabolism. I know hard it is because I’m one of those people that cannot digest flour. When I bake anything that requires flour, I use either rice, oat, or coconut flour. Yes, the texture is different and you have to add more flour to compensate from the exchange. But come on let’s all be healthy in today’s world.
The process of making these lovely cookies is really easy. First grab a large bowl, then add the pumpkin puree. Now I have seen people buy pumpkin pie filling thinking it is the same as pumpkin puree which it is not. If you are like me and you don’t want to use canned pumpkin puree, imagine me giving you a high five because I don’t like using canned pumpkin puree there is a weird taste due to the can.
Add the stevia and pumpkin spice, you can use sugar if you would like but I like sugar free option whenever I bake. Give it a stir, then add chocolate chips. I prefer to use the sugar free chocolate chips as well as semi sweet chips. Then fold the chocolate chips into the cookie.
Grab a cookie sheet lined with parchment paper, what we need to do with the cookies is wet your hands and scoop some out. Roll them in a ball and place them on the cookie sheet. After all of the cookies are rolled into balls, use your palm and press the cookies down. Place the cookies in the oven and don’t forget to set the timer. I have been there, got in the groove and forget to set the timer.
