Candy Corn Meringue Cookies are the perfect fall treat to make your day even sweeter!
Yes, today we are making meringue cookies! These meringue cookies are pretty flat because I used granulated sugar to make these cookies. I wanted these cookies to be a flat shape and actually look like a cookie, so that is where the granulated sugar come from. It makes the cookies heavier and gives them the flat shape to look like a cookie.
These cookies are absolutely delicious with the melted candy dipped on them and are pretty irresistible! These cookies make the perfect fall treat for holiday parties and especially since Halloween is coming up!
Let’s get down to a few details. I did use room temperature egg whites. I let them set in the oven until they dried about 2-3 hours after they were cooked in the oven. However, if that is to long of a wait if you don’t mind cracks set them at 300 for 20- 30 minutes.
Candy Corn Meringue Cookies Recipe:
4 large egg whites (room temperature)
1 ½ cups granulated sugar (if you use powder sugar your cookies will not be flat)
¼ tsp. Cream tarter
1tsp. Vanilla extract
1 bag orange candy melts

Gel food coloring
Use a super clean stainless-steel bowl with the wire whisk attachment. Break up the eggs whites by mixing them on medium-low for 1 minute. Add the cream of tartar, vanilla and salt. Mix on medium for about 2 minutes, until soft peaks form.
Turn the mixer to medium-high and add the sugar, one heaping tablespoon at a time. Scrape the side down so that all of the sugar is included in the meringue. Beat meringue until very stiff peaks form, the meringue is glossy and the sugar is incorporate.
Finally, beat in the vanilla until combined. Place meringue in three separate bowels add yellow food coloring to one bowel and orange to another. Place meringue in piping bag alternating between the three colors. Pipe the meringue onto parchment covered baking sheets. Bake at 200 degrees for 2 hours. Then, turn off the oven and leave the meringue in the oven for several hours or overnight.
