When I tell you this fat free banana bread is super moist and will cure your sweet tooth, you better believe me! It’s pretty simple to make and I know you have most of the ingredients in your pantry to make this quick snack in minutes.
We usually keep bananas in the kitchen, because they are high in potassium and boost energy levels. I really enjoy adding them to my snacks, but I have never been one to eat just a banana. I have no clue why, but I always half to have something else with bananas. Nut butters, yogurt or even an apple. I just can’t eat bananas alone. The only way I could eat a banana alone would be if they are dried in a dehydrator. I am not big on the fried ones although I could eat those in one sitting. Oh and let’s not get me started on freeze dried bananas, that’s like eating chalk!
Well I am back to using coconut sugar again. I swore of the sugar a few months back, but I guess it’s something that I crave every now and then. The caramel flavors really pop in the banana bread recipe. If you’re trying to get fit this summer (oh believe me I am trying) than this is your guilt free snack, you’ll just love.
Fat Free Banana Bread Recipe:
4-5 large Bananas
1 large egg
¾ cup sugar
1 ½ cup pastry flour
2 tsps. vanilla
2 tsps. baking powder
½ tsp. salt
Splash of milk (optional)
Recipe Directions: Preheat oven to 350. Lightly grease small loaf pan. In large bowl mix flour, baking powder, salt and set aside. In a medium bowl mix sugar, banana (I like to use a fork), egg, vanilla and milk Once combined add to flour mixture to wet mixture. Stir until mix is just moistened. Place batter into greased pan and bake in preheated oven for 40-60 minutes, or until a toothpick inserted into center of the loaf comes out clean.
