Pomegranates are in season here in Arizona, and if I am lucky enough to find a few hanging from neighbors yards I like to grab them. Most of them are going to waste any way; however the jack pot is if I get a bag full. That way I don’t half to pay those high prices at the grocery store. Have you seen the prices of pomegranates!? It’s almost five bucks for one, but with all the antioxidants and nutrients they provide, it’s worth the price! However I do get upset when I see them going to waste in peoples yards. It breaks my heart, because apparently they don’t understand how much they cost. I can’t wait to get a bigger yard, so I can grow a few pomegranate trees myself.
I love cookie dough, mushy, thick and raw in all its goodness. But with only so many varieties and not too many of them are healthy. I love to create my own raw cookie dough as a healthy treat. Pomegranate Cookie dough is one of my treats to enjoy lately. It’s tart, sweet and a refreshing snack when you’re craving something unique without all the sugar in regular cookies dough.
Pomegranate Cookie Dough Recipe:
1 cup rolled oats, blended into oat flour
3 tbsps. maple syrup
¼ tsp vanilla extract
Pinch of salt (optional)
¼ cup pomegranate juice
Recipe Directions: In a medium bowl add oat flour, maple syrup, vanilla extract salt and Mix until combine. Slowly add pomegranate juice and mix until the mixture is sticky. If it’s too dry add another table spoon of pomegranate juice until the mixture is moist. Once done place cookie dough in air tight container and place in the fridge. Keeps good for 5 days.
