I was supposed to be a part of the pin a pop series that peanut butter and co was hosting, but I missed it because my personal life has been one big roller coaster this year. I really don’t know how to open up about what is going on but I am just going to tell ya!
Josh broke his fibula at work when 20 sheet of dry wall that were over 100 pounds came crashing down on his leg. Instead of his company letting him stay in flagstaff to recover, they drove him back to phoenix (because they were being cheap)that same night. While I was unloading the truck and putting his stuff in the house he was sitting on the tailgate. When I came back to get the rest of the stuff he passed out and I rushed him to the ER! He fractured his skull which left a pea size hole on the right side of his skull due to the accident at work. He was in the hospital for a few days and was allowed to come home once the doctors said he was good to go. This happen a few weeks ago and I have been taking care of him as he hobbles around the house.
I am thankful that he is ok! But I just don’t understand why this has been such a horrible year for us. However I am still positive that the second part of the year will be much better than the first. I know accidents happen, so I am trying to keep a positive outlook or maybe it’s just the magnesium that has me so happy go lucky.
I had photograph these popsicles a while ago and have been making the recipe ever since. The popsicles are very creamy, full of fat and mainly the only thing Josh has been eating since it’s been hard for him to chew. These chocolate peanut butter popsicles are a great way to beat the heat and there dairy free.

Chocolate Peanut Butter Popsicle Recipe:
- ¾ cup dark chocolate dreams peanut butter
- ½ cup sugar substitute
- 1 can full fat coconut milk
- 2tbsps. cocoa powder (optional)
Recipe Directions: Add all ingredients to a blender or food processor and mix until combined. Pour mixture into ice-cream molds and freeze overnight. Once firm take pops out of mold and enjoy.
