Many of you may not know this, but I like to juice twice a week! I have a huge obsession with getting mega doses of vitamin A! If you haven’t looked at: my what I ate today then you’re probably concern with me wanting a lot of vitamin A. I have not had any issues with taking lots of vitamin A, so I am not to concern. Besides there are people eating 50 banana a day and they’re doing just fine, so a little vitamin A won’t hurt me.
I don’t know where this obsession came from I just may half to do a Monday minute talking about the benefits of carrots because there are so many!!!
With all the carrot juice I have been drinking I have lots of shredded carrot fiber that I hate to throw away! I have a pet peeve of wasting food, so once the shredded carrots pile up it’s time to get creative. I usually make sugar free carrot bread as a side dish for dinner or a quick snack. It’s really simple and perfect for those looking for healthy alternatives to sugar or you have piles of shredded carrots that need to be used.
Sugar Free Carrot Bread Recipe:
2 cups flour (I used whole wheat)
1 cup sugar sub (I used sucrose)
½ tsp. salt
1 tsp. baking powder
2 eggs
2 cups shredded carrots
½ cup butter (I used whipped)
1 cup milk (I used almond)
Recipe Directions: Preheat oven to 350. Lightly grease a 9*5 loaf pan. In large bowl combine flour, baking powder, soda and salt. Combine eggs, milk, butter, and sugar sub; add to flour mixture. Stir until just moistened. Fold shredded carrots into batter until mixed, place batter into grease pan. Bake in preheated oven for 40 to 60 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let cool in pan for 10 minutes before removing to a wire rack to cool completely, before slicing.
Notes: I used carrot fiber from juice carrots so baking time may vary if your using regular shredded carrots.

How much shredded carrot does this recipe call for? Is just shredding it enough or does it need to go through the juicer? Thank you for your reply.

I used about 2 cups of packed shredded carrots, since I juice 2-3 times a week I always have carrot fiber on hand; so it’s not a requirement that it goes through the juicer. If you have lots of carrots always in the fridge it’s a great recipe. 🙂 If your just using regular shredded carrots I would not pack the shredded carrots in the cup because of the water content. Hope this helps 🙂
