I know I said I would start food diary last week since I need to keep account for all the things I put in my mouth, but I have been extremely busy lately. I know that’s not an excuse but one thing has hit me after another. Therefore I will start my food diary this week and I will try to do it 3-4 days out of the week.
I will post it under adventures of country boy and city girl and name it my food diary or something. So expect to see a few more posts during the week from me, maybe even two! I know this blog has gotten an upgrade and I try to keep it professional with recipes and beauty content. However I also want to add a personal touch, so you can see the things that I do besides create content for you guys.
I have been eating these all week because they are quite addictive, did I mention they make a great low-fat snack. They are sugar free, full of fiber and all natural. The milk may not be needed I didn’t use it for the recipe, but I have and it’s optional if you can’t get the dough to stick. The dough should not be to sticky; it’s a simple treat to make and only takes a few minutes. They require no time in the oven because we all know it’s about time to utilize the fridge with the summer heat coming.
Peanut Butter Banana Bites Recipe:
2 cups oats (blended in food processor or blender)
¼ cup stevia
½ cup powdered peanut butter
2 large bananas (smashed or blended)
2 tbsps. cocoa powder (optional)
1-4 tbsps. almond milk (more maybe needed)
¼ tsp. vanilla extract
Recipe Directions: In a large bowl mix all dry ingredients. In medium bowl mix wet ingredients and add to dry ones until combined. You may need more milk just to get the dough to stick together. I find that if you blend up the banana you will not need any milk at all, so if you’re blending leave out the milk. Once the dough is mixed use a tbsp. to scoop dough and roll into mini bites. Place in the fridge for 20 minutes and let set; sprinkle with cocoa powder and store in airtight container in fridge.
