Josh has been on this protein kick lately and has suckered me into making him snacks that are sugar free with lots of protein. My kitchen cabinets have turned into protein, glutamine and creatine store. Literally I’m wondering how long will he keep up with this loaded protein regimen. I guess when he stops walking around thinking he is ripped with his chest poked out is about the time this protein kick will stop.
I started to use some of the whey protein he has been buying when I realized that I was having an allergic reaction to it. I was bloated, my throat would swell up and I was having bad breakouts. After doing a little research, I realized that people who are lactose and tolerant or have a dairy allergy should not be using pure whey protein at all. I looked into trying whey isolate and some of my reactions have calmed down. I did notice that I was still a bit bloated when I would have it with water. I think it’s safe to say that I can have isolate whey in baked goods. I just can’t’ have it in plain water, so if your lactose intolerant and haven’t tried isolate protein powder it may work better then whey.
I have been craving lemon lately and the notes of lemon that come out in these sweet squares are just divine. Make sure you don’t blend the oats into a complete flour but just enough to get a course oat flour or the dough won’t stick.
Lemon Protein Square Recipe:
2 cups rolled oats (blended into a crumble)
¾ cup stevia powder
1 scoop protien powder
2 tbsps. sugar free lemon pudding
1 large egg
½ cup liquid egg whites
1 cup almond milk
¼ tsp. lemon extract
1 tsp. vanilla extract
Recipe Directions: Preheat oven to 350 degrees; grease an 8*8 baking dish and line with parchment paper. In a medium bowl mix oat flour, pudding mix, stevia and protein powder. Once combined add eggs, almond milk, vanilla and lemon extract until mix. Place batter into dish and bake in preheated oven for 15-30 minutes, or until a toothpick inserted into center comes out clean. Let cool and cut into 4-8 squares.

Those look yummy…and I like you can not tolerate whey so I have been using plant based protein and some are actually really good and a good alternative….BTW love your site you are a women after my own heart I am also a tea junkie…I live for green tea lattes from Starbucks on the weekend lol.
