I’ve notice that there are not a whole lot of festive sugar free recipes out there, so I took it upon myself to create a festive recipe that has no sugar in it at all. After all it’s almost Valentine’s Day and you may want to empress that lover of yours who can’t have sugar. I must admit it’s pretty tough working with sugar substitutes, but after few batches I got this recipe just right. I added coconut oil for the healthy fats, but you can use butter or margarine as a substitute. I don’t know if it will change the texture but it’s worth a try.
Ever since I made these strawberry chocolate chip blondies, I have made at least four batches for my coworkers. Everyone loved them even those who could have sugar enjoyed the flavor. Most of my coworkers who can’t have sugar expressed how they miss strawberry flavors and this blondie hit the spot. I guess anything with strawberries gets everyone excited at my job and when you add chocolate chips oh boy! They reminded me of a strawberry wafer cookie, but if you’re watching your calorie intake. I would admit half the coconut oil and the chocolate chips. That way you can have a sweet treat with half the calories. These blondies are dedicated to Valentine’s Day and they are bursting with strawberry flavor! Disclaimer: No real strawberries were used. 🙂
Sugar Free Strawberry Chocolate Chip Blondies Recipe:
2 cups all-purpose flour
1 packet .60 oz. sugar free strawberry gelatin mix
2 tsps. baking powder
¼ tsp. salt
2 large eggs
1 tsp. vanilla extract
½ tsp. strawberry flavor (optional)
1 cup sugar substitute (you can use any sugar sub, if your using stevia or splenda it needs to be the same amount)
¾ cup coconut oil
1 cup sugar-free chocolate chips
Recipe Directions: Preheat oven to 350 degrees; grease an 8*8 baking dish, line the bottom with parchment paper. In a medium bowl combine flour, baking powder, salt and gelatin mix. In a large bowl beat eggs, coconut oil, sugar sub and extracts until mix. Beat in flour mixture until the dough crumbles; once the dough is crumble add chocolate chips and combine with hand or rubber spatula until the dough becomes soft. Place batter into greased dish. Bake in preheated oven for 15-30 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let cool in dish for 10 minutes before cutting into slices.

Wow you must have nothing better to do than to troll blogs! Well I hate to double burst your bubble! It’s called sugar free gelatin that I used. I guess you have been living under a rock somewhere that you haven’t seen it at the stores, but they do sell gelatin in sugar free forms. I don’t lie to my readers!
