The beginning of the year is upon us and apparently I already miss the holidays. I was not looking forward to going back to work and school either. I have been trying to get my classes out of the way and of course catching up on all the work gossip, that I think my blog has been suffering. I am definitely trying to get back in the groove of things. Just give me one more week and I’ll be ready to go. Speaking of work gossip a lot of my coworkers have friends and family members who are suffering from diabetes. I know a few of my co-workers were diagnosed with it as well. I didn’t know how common the disease was, but they say it’s almost 3 out of 10 people that become diabetic. If left untreated it can cause blindness and the effects are indefinite. I really don’t want to turn this into a PSA; but I think it’s one of those diseases that are very common but not talked about often. I did a lot of sugar free recipes last year and I think this year I am going to do a lot more. Of course since I can have sugar you will see a lot of recipes that are sweet as well. I am also going to talk a lot about sugar substitutes this year (again), but I think it will be more dedicated to people who can’t have sugar at all.
These orange biscotti cookies are sugar free because I am making a lot of treats for coworkers who can’t have sugar; but still love to snack on sweet things. Many of them don’t read my blog and I am not running around telling them about it, so I like to make them special treats when I can. If you miss eating biscotti and love orange flavors this is the perfect little treat. Now if the dough is a bit dry just work it the ingredients. It will take a few minutes but the flour will combine and you will be left with dough that’s easy to mold. I would not add any more moisture to the dough because then it would not be biscotti!!!
Sugar-Free Orange Biscotti Recipe:
2 cups flour
3 large eggs
1 ½ tsps. orange extract
1 tsp. vanilla extract
¾ cup sugar sub (I used stevia)
¼ tsp. salt
1tsp. baking powder
2tbsps. coconut oil
1 Orange
Recipe Directions: Preheat oven to 350 degrees, in a medium bowl combine flour, salt, baking soda and the zest of half an orange. Combine eggs, extracts, coconut oil and sugar sub until combined. Slowly add flour mixture to wet mixture and combine until you get a dough. Make one 12 inch log or two 6-8 inch logs. Bake for 20- 30 minutes or until golden and firm to the touch. Let the logs cool and cut into diagonal ¾ inch thick slices using a serrated knife. Place slices on cookie sheet. Bake at 320 for about 15-20 minutes, turning after 10 minutes, until dry and slightly brown. Let cool on baking sheet and store in an airtight container.
