On the ninth day of pumpkin season we made chewy banana oh so delicious Pumpkin Banana Bread Bars (on the piano playing moonlight sonata in minor D. I am under the weather, so I am no longer allowed to sing for the time being). I am so sorry to everyone who has been enjoying all the pumpkin recipes, but we’re going to half to put a hold on 30 days of pumpkin season real soon. December is quickly approaching us and were going to get pretty busy savvy naturalistas.
I will try to revive 30 days of pumpkin season next year. Let’s just hope for the best! I feel next year is going to be a great year (you’re going to hear me say this a lot towards the end of the year). I look forward to blogging a bit more than I did this year. I have some great news that is happening next year as well, and probably will not reveal it to you until then. Banana pumpkin bread bars are a simple snack that requires no time at all, you will enjoy the flavor of banana with every bite. You don’t have to add the coconut on the top. It is not required but it does give the bars a lovely flavor.
Pumpkin Banana Bread Bars Recipe:
2 cups rolled oats
¾ cup pumpkin puree
2 bananas smashed
½ tsp. cinnamon
¼ cup honey
1 tbsp. ground flax seed
Recipe Directions: Preheat oven to 350 degrees, in a 8*8 baking dish place parchment paper and set aside. In a medium bowl add pumpkin, honey, and banana and mix until combine. Fold oats, ground flax seed and cinnamon into mix until combined. Place dough in baking dish, and press down to each corner is covered. Place in the oven for 20 minutes or until a tooth pick inserted in the middle comes out clean. Let cool and cut into 8 bars and store in air tight container.
