On the sixth day of pumpkin season we made Pumpkin Sesame Bites (in my queen of the night aria voice that’s about to crack from the pressure). Are you counting down the days to Christmas the way I am? I am looking forward to all the pressure just being over with. I think Christmas should be consider just a stressful holiday, but with all the snow and chilly weather it’s just become such a cozy day. Pumpkin Sesame Bites was my attempt to make a low-fat brownie that was thick and chewy with a nutty flavor. Let’s just say I got a sweet and nutty cake texture that’s moist and tastes great in bite size pieces. I’m still on a mission for that chewy, crispy thick pumpkin brownie, but these were pretty good so they made the cut in the 30daysofpumpkinseason.
Pumpkin Sesame Bites Recipe
1 ¼ cup flour
1 tsp. baking powder
½ tsp. salt
½ cup coconut sugar
1 egg
¼ cup sesame seeds
1 tsp. vanilla extract
¼ cup almond milk
¼ cup whipped butter
¾ cup pumpkin puree
Recipe Directions: Preheat oven to 350, grease an 8*8 baking dish and line the bottom with parchment paper and set aside. In a large bowl mix pumpkin puree, sugar, whipped butter, egg, and vanilla extract. Once combined, to the bowl add dry ingredients and mix until combine. Fold in sesame seeds and milk until incorporated. Place batter in baking dish and place in the oven for 30-40 minutes or until tooth pick inserted in the middle comes out clean. Once cool cut and serve.

I love topping sesame seeds on everything else, they are a pretty garnish, aren’t they? I tried making kabocha cookies with sesame seeds – the recipe failed 🙁 These pumpkin bites look adorable!
