On the third day of pumpkin season we have made Oatmeal Pumpkin Cookie Bites (in my alto wanting to be a soprano singing voice)!!! The weather has finally cooled down a bit and besides all the mosquitoes that are trying to attack me. I can honestly say I miss summer! I actually enjoy the death weather that comes for two months and feels like it’s been here a century. While it has cooled down a bit we are still in the 80’s, so of course I am still in the mood for no bake and ice cream treats. Oatmeal pumpkin cookie dough bites are loaded with vitamin A (thank you pumpkin) and the easiest snack I ever made. I added dark chocolate chips which is an optional step. If you decide to add them I would suggest adding mini ones. They taste great without chocolate, but we all know chocolate make everything taste better. This is a perfect treat for adding vitamin A to your diet, and if you live in a part of the world where temps are pretty warm. I know you will enjoy this snack!
Oatmeal Pumpkin Cookie Bites Recipe:
2 cups rolled oats (blended in blender or food processor)
½ tsp. salt
½ tsp. cinnamon
1 tsp. vanilla extract
¾ cup pumpkin
¼ cup whipped butter, softened
½ cup sugar substitute (I used stevia)
½ cup chocolate chips (optional, mini work best)
Recipe Directions: In a large bowl and oat flour, salt and cinnamon until combine. Add pumpkin, whipped butter, vanilla extract, sugar sub and chocolate chips to the large bowl. Mix all the ingredients until combined. Use a tbsp. or ice cream scoop to form mini balls. Once formed place balls in an air tight container. Store in Fridge.
