Yes its pumpkin season and we are going to do a lot of pumpkin recipes! I go crazy over fall and winter squash and pumpkin by far is the most popular. The pumpkin recipes we make will be healthy, because all the pumpkin recipes I see are loaded with sugar, butter and just too many calories. Why would you want to take away from the flavor of the pumpkin with all that butter and sugar?
By now you know I am all about more bang for your buck or more food for your calories! Because as an American I love my big portions, but I hate the guilt, so let’s make healthy pumpkin recipes. Pumpkin Chia Bars are low in calories and dare I say fat free. They are easy to make, most of the ingredients can be found in the pantry. If you don’t have fresh puree pumpkin you can always use the can version.
Pumpkin Chia Bar Recipe:
2 ¼ cups rolled oats
½ cup honey
1 cup pumpkin puree
1 tsp. vanilla extract
¼ cup chia seeds
Recipe Direction: Preheat oven to 350 degrees, in a 8*8 baking dish place parchment paper and set aside. In a medium bowl add pumpkin, honey, vanilla extract and mix until combine. Fold oats and chia seeds into batter, mix until incorporated. Place dough in baking dish, and press down to each corner is covered. Place in the oven for 20-30 minutes or until a tooth pick inserted in the middle comes out clean. Let cool and cut in to 8 bars and store in air tight container.

Oh dear, what a clever way to use pumpkin puree! Darn these chia bars look delicious…I’ve made these oats bars before with maple syrup and almond butter, they were pretty sticky though, but so good! I’ve never made them with chia seeds before, they look so pretty!

I was looking for a recipe for pumpkin bars and came across this one. So many have brown sugar in them that I am pleasantly surprised that you list honey as one of the ingredients. Now that fall is on the way, I am looking forward to eating something with pumpkin in it. Sounds delicious and a great pre-walk snack before the Astoria, OR 10k Walk-Run coming up in October.
