I know I have been MIA for a few weeks, I caught the flu and could barely get out of bed the first few days. It’s been about three years since I have had the flu; I didn’t even know what was going on with my body. I thought maybe I had an allergic reaction to something, and then I thought it could be from some form of dairy I probably ate. I had not had any dairy in a while so I knew that was out. About the second day in I finally realized I had the flu, when I broke out in a cold sweat and my body temperature sky rocketed.
I was definitely in denial about the situation because I work around kids (they are always sick), coworkers that get sick (some spread there germs all over) and not one has ever gotten me sick. I just could not believe I caught the flu from Josh. I guess there is the first time for everything! I told him next time he gets sick I am putting him in quarantine with mega doses of vitamin c. The only good thing about being sick is you lose weight and I didn’t lose one pound!
I am finally feeling much better and while my appetite never left, I am happy I can eat sweet things again. I have been craving popsicles especially with the intense temperatures. Creamy chia popsicles are high in fiber and dairy free. You only need a few ingredients to make this easy cold treat.
Creamy Chia Popsicles Recipe:
2 ½ cups almond milk
¼ tsp vanilla extract
½ cup sucanat
½ cup chia seeds
Recipe Directions: In a small pot on low heat add sucanat and almond milk until sucanat dissolves, add vanilla extract and let cool. Once cool stir in chia seeds, let set for a few minutes. Place mixture in popsicle molds and place in the freezer for four hours or overnight.

Sucanat is a non-process cane sugar that is much healthier then regular sugar 🙂

Can you use a splenda mixture or agave nectar as a substitute of sucanat?

If you use splenda it may not dissolve, but agave is perfect!
