The season for sticky sweets and lots of drinks has finally arrived, it’s almost time for all you on the east coast to put away your parkas and enjoy the lovely spring weather. Oh don’t worry most of us on the other side of the country are getting ready to hibernate from the heat. Just think about how lucky you are that you will not half to deal with oven season! Oven season has officially hit phoenix. What is “oven season” you ask?
Think about baking a pizza at 400-450 degrees in your oven for 30 minutes. Once the pizza is done you open the oven and a rush of hot air hits you like a furnace. Well imagine living in it that for the next 4-5 months! That’s exactly what I will be dealing with!! Thank heavens Peanut butter& Co was nice enough to send me a few jars of bee’s knees peanut butter, to enjoy while I brave the heat. Now if only I could get them to send me a ticket to tour the factory for the next four months! My life would be complete! Hey a girl could dream right!!!?
Honey and peanut butter go together just like peanut butter and banana!! Thanks to Peanut Butter & Co, you can have it all in one jar. They created a lovely peanut butter made with honey called the bee’s knees. You guys know I love me some peanut butter and the added honey is a bonus. I love the creaminess of the peanut butter and the rich flavor of the honey. I am so happy they combined the best of both worlds by adding honey to their peanut butter.
Josh came up with the name for Peanut Butter Cookie Muffins. I was going to call them peanut butter muffins, but when Josh told me once he bit into it they reminded him of a cookie. They were soft, moist and chewy on the inside with a crispy and crunchy crust. The batter may get a bit lumpy thanks to the peanut flour. The longer the batter is allowed to sit the less lumpy it will be. Don’t expect them to rise like muffins, they will be pretty flat, but they are full of flavor and taste much better once cool. Peanut Butter Cookie Muffins are all natural, gluten free and make a lovely snack for anyone on a low carb diet. They are also high in protein if you’re looking to add more protein to your diet. They make a wonderful light snack with a glass of milk.
Peanut Butter Cookie Muffins Recipe:
1 ¼ cup peanut flour (I used PB2)
¼ tsp. salt
½ tbsp. baking powder
¾ cup bee’s knees peanut butter
1 egg white
1tsp. vanilla
¾ cup sugar substitute (I used coconut sugar)
1 cup and 3 tbsps. almond milk
Recipe Directions: Preheat oven to 400 degrees, grease muffin tin and in medium bowl mix dry ingredients and set aside. In a large bowl add sugar, egg white, milk, peanut butter and vanilla. Stir until wet ingredients are combined. Add dry ingredients to wet ingredients and mix until moistened. Let batter sit for a few minutes (there may be a few lumps in the batter, letting the batter sit will decrease the amount of lumps). Fill greased muffin tins 3/4 full. Bake for 25-30 minutes or until a tooth pick inserted in the middle comes out clean. Remove from oven, and let sit for a few minutes before removing muffins from the pan.

My favorite springtime beverage is homemade lemon-limeade made from fresh squeezed lemons and limes with a splash of OJ. My mom makes it, and it’s an absolute delight! perfect accompaniment for all the strawberries, fresh produce, and warm temperatures that start emerging in the spring.

The summers seem to push spring aside pretty quickly here in Nashville, TN. I like to enjoy a cool Thai Iced Tea. Made with a hibiscus blend and unsweetened vanilla almond milk instead of the traditional cream which still gives it that smooth finish without the added tummy tangles. Bright and Yummy! Can’t wait to try these cookies. My family loves peanut butter and honey too!
