I have a slight obsession with the weather channel, but lately I have turned it off since all they talk about is the heat wave that hit Cali! Really!? Why are people in Cali complaining about the weather!! Come to phoenix and then tell me about a heat wave!! Growing up in LA, it never hit me how amazing the weather was all year round. Once I moved to the desert I realized that I took for granted what kind of weather I got accustomed too. In L.A the weather was always just right, in phoenix I am either too hot, too cold, or it gets so arid that I can’t breathe. When it gets extremely arid I can barely form complete sentences when talking. Gum is definitely a life saver when living in the desert. I know you’re not reading this so I can ramble about the weather, but it’s just one of those things that every now and then I like to talk about.
With all the powdered sugar and cocoa powder I feel like I’m in a winter wonder land, even though we are pushing 90 degrees. Sugar-Free Chocolate short bread cookies are not for everyone, if you’re a chocolate lover and you can handle the rich flavor of cocoa powder without lots of sugar, then you will love these cookies. However if your new to cocoa powder and sugar substitutes, you may not like these cookies. Make sure you don’t roll out your cookie dough to thin, so your cookies do not dry out on the bottom. Very rich and crispy when cool and taste much better the next day, this cookie is not meant to eat when hot.
Chocolate Short bread Cookies Recipe:
¾ cup whipped butter
½ cup coconut sugar
½ cup stevia powder
¾ cup flour
¼ cup cocoa powder
1 tsp vanilla extract
Recipe Directions: Preheat oven to 350 degrees; line a baking sheet with parchment paper and set aside. Cream butter and sugar until fluffy. Stir in vanilla; add flour , cocoa powder and mix well. On a lightly cocoa floured (using cocoa powder with a touch of flour will guarantee the cookies are not white when baking) surface roll out the dough into a 1/4 inch thick circle. Cut into rounds or other shapes using a lightly floured cookie cutter. Place on baking sheets and place in the refrigerator for about 15 minutes. Bake for 5-8 minutes, cool on a wire rack.

I think the snow is finally gone and we have been getting lots of warmer weather here but I have a feeling this summer is going to be a scorcher here too. These cookies look so pretty – I love chocolate cookies that are not too sweet 🙂
