I can’t wait for strawberry season, with all the ideals I have in my head I am looking forward to purchasing those bright, juicy and sweet red berries. I am counting down the days until they get here! I know it will be here pretty soon and when the berries start flowing so will all my ideals.
There is something about placing bread in the oven and waiting for it to rise that’s magical. Cocoa muffins are light in calories and low in fat. They are bitter sweet and the flavor is more of dark chocolate without the cocoa butter and sugar. If your craving chocolate and not looking to break your diet try rich cocoa muffins as a lighter treat.
Cocoa Muffins Recipe:
1 ½ cups flour
½ cup cocoa powder
½ cup coconut sugar
¼ cup sugar
1 ½ tsps. baking powder
¼ tsp. salt
1 tsp. vanilla
1 egg white
¼ cup whipped butter
¾ cup apple sauce
1 ¼ cup almond milk
Recipe Directions: Preheat oven to 400 degrees, grease muffin tin and in medium bowl mix dry ingredients and set aside. In a large bowl add sugar, egg white, milk, apple sauce, whipped butter and vanilla. Stir until wet ingredients are combined. Add dry ingredients to wet ingredients and mix until moistened. Fill greased muffin tins 3/4 full. Bake for 15-20 minutes or until a tooth pick inserted in the middle comes out clean. Remove from oven, and let sit for a few minutes before removing muffins from the pan.

I can’t wait for strawberry season here too – it should be here soon and we love going strawberry picking. I have been on such a muffin kick lately and these cocoa muffins look fantastic!

You could try banana maybe..
