One of these days I am going to talk a little bit more about oat bran (in a post), it doesn’t get as much hype as rolled oats but oat bran has just as much fiber. It’s a very versatile and easy to find grain.
I am very fond of oat bran muffins because you just don’t half to eat them as a snack or for breakfast. Try oat bran muffins as one of your dinner side dishes with just a bit of butter.If you can’t find coconut sugar use about 1/4 cup of regular sugar. They are a great source of fiber and will not kill you diet.
Oat Bran Muffins Recipe:
1 cup flour
1 cup oat bran
2 tsps. baking powder
¼ tsp. baking soda
¼ tsp. salt
1 egg white
½ cup coconut sugar
½ cup apple sauce
1 cup almond milk
2 tbsps. whipped butter, softened
Recipe Directions: Preheat oven to 400 degrees, grease muffin tin , in medium bowl mix dry ingredients and set aside. In a large bowl add sugar, egg white, milk, apple sauce and whipped butter. Stir until wet ingredients are combined. Add dry ingredients to wet ingredients and mix until moistened. Fill greased muffin tins 3/4 full. Bake for 15-20 minutes or until a tooth pick inserted in the middle comes out clean. Remove from oven, and let sit for a few minutes before removing muffins from the pan.
