Chia Seed Wafer Cookies! The hinges and case on my lap top are coming apart, so I have been taping it to the best of my ability. I hate taking my computer in to get looked at. I know it can take up to two weeks to get it back and I have a blog, school and store to run (that can’t happen). If there is anything wrong I just suffer with it until it gets really bad! Well when I ran out of duct tape I realized it was time to take it in. After almost two hours in line they finally checked my computer, and it turns out that I didn’t have accidental insurance.
Although I have not had an accident it’s more wear and tear my insurance does not cover that. I still don’t understand what I am paying geek squad for, and after asking how much to fix my lap top; they were going to charge me 120 bucks! Just too change the hinges and case (I don’t think so). I declined and bought more duct tape too wrap it up. I finally talked Josh into trying to fix it, so I am hoping in the next two weeks we can get the parts. I can’t wait until my lcd screen is no longer hanging to the side and I can say “Good bye tape”!
When it comes to cookies I can go either crispy or chewy, but if I had to make a choice I would go with crispy cookies. I love the taste of anything that crunches and snaps, and if you’re a fan of crispy cookies you will adore chia wafers. If you prefer a chewy version, take the cookies out the oven a few minutes early. However this is meant to be a crispy cookie. If you’re looking to add more fiber to your diet, and kill your sweet tooth at the same time. Look no further then chia wafers, if you can’t find agave, you can substitute with maple syrup or honey. I would not recommend replacing the liquid sweetener with extra coconut sugar because they may not increase in volume. Enjoy your crunchy cookies and the added fiber as well.
Chia Seed Wafer Cookie Recipe:
¾ cup chia seeds
¼ cup whipped butter, softened
1 egg white
½ cup coconut sugar
½ cup agave nectar
½ tsp. vanilla extract
½ cup flour
¼ tsp. salt
¼ tsp. baking powder
Recipe Directions: Preheat oven to 375 degrees. Place chia seeds on a baking sheet and toast for 10-15 minutes (make sure they don’t burn). In a large bowl mix coconut sugar, agave, butter, egg white, vanilla extract, flour, salt, baking powder and toasted chia seeds together until combined.
Use a spoon to drop ½-2 tsps. of dough, about 1 ½ inches apart onto a baking sheet lined with parchment paper. Bake for 6-8 minutes or until golden brown. Let cookies cool for about 2 minutes before removing from baking sheet to a wire rack to cool completely. Store wafers in an airtight container.

You could try, but I don’t know if the wafers will spread the way they will with butter.. If your looking to make them dairy free you could try earth balance butter!

It gives them a toasted flavor that I like, but you don’t half to do that! Most of my readers who made this recipe loved the cookies without toasting the chia seeds! I just love the toasted flavor 🙂
