I have no problems counting my calories and eating small portions during the week, but I really struggle to eat right on the weekends. On the weekends I like to splurge on all sorts of healthy goodies. I do a lot of baking and cooking on the weekends, so I am taking in a lot of calories. I have been trying to cut back but I just love to eat all the recipes I create. I can’t just taste!
I am going to try and photograph all the meals I eat during the weekend to hold myself accountable. I really want to drop a few more pounds before my birthday. Honestly I have never had an issue with working out, I love to sweat! I have always had problems with my diet. I just love to eat, but I must have will power if I want to pull of some of this weight by the end of the year! Who’s with me?!!
I prefer sesame seeds over chia seeds and chia seeds over flax seeds. However I do love ground flax seeds in my oatmeal. Peanut Butter Chia Granola bars are soft, chewy and make a perfect snack on the go. They also make wonderful meal replacement for those busy mornings when you forgot to eat breakfast.
Peanut Butter Chia Granola Bar Recipe:
2 cups rolled oats
2 tbsps. powder peanut butter ( I used p2b)
¼ cup chia seeds
¼ cup apple sauce
½ cup agave nectar
2 tbsps. peanut butter
Recipe Directions: Preheat oven to 350 degrees, line an 8*8 baking pan with parchment paper and set aside. In a large bowl mix oats, powdered peanut butter, chia seeds and apple sauce. In a small sauce pan add peanut butter and agave nectar, cook on medium heat, stirring until peanut butter has melted into the agave. Add agave mixture to the bowl and mix until ingredients are combined. Place mixture in prepared baking pan and place in the oven. Bake for 10-20 minutes. Let cool and cut into bite size pieces.

Haha totally hear ya on sampling all the goodies we make – I would have a hard time just having one of these bars too! I love peanut butter and oats together and the chia seeds sound like a great addition in here:)

These look fabulous Shundara!! Eating well on the weekends is something I’ve really been struggling with lately too! During the week I am A-OK and on the weekend the hubby and I always end up getting into the sweets and goodies we keep around a little too much! I love how healthy and hearty these granola bars look – Pinned to give them ago after my exams are done!!! Have a great weekend 🙂
