Can you believe we are almost in May! For some odd reason I feel summer is coming faster then expected. We are already in the 90’s and I am looking forward to fall. Pretty soon I will be complaining about the hot temps! I have been trying to stay away from the oven as much as I can; while trying to find healthy alternatives to kick my sweet tooth. Coco protein bites are all natural, take less than 10 minutes to make and only require a few ingredients.
These bites maybe tiny, but only a few will keep you full all day long. They make the perfect snack when you’re looking for a healthy affordable treat that’s not in the vending machine! Full of protein, fiber and super foods like chia seeds; make coco protein bites a healthy little snack for all occasions.
Coco Protein Bites Recipe:
1 cup rolled oats
1 tbsp. protein powder
1 tbsp. coco powder
4 tbsps. chia seeds
1 tbsp. peanut butter powder (pb2)
½ cup apple sauce
15-20 drops stevia (to taste)
Recipe Directions: In a small bowl mix apple sauce and stevia and set aside. To a large bowl add rolled oats, chia seeds, peanut butter, protein and coco powder. Stir until all the ingredients are mixed; stir in apple sauce mixture until it has been fully incorporated. Roll mixture into medium balls and let harden in the fridge, about 10 minutes. Once done store in air tight container.
