Easter is almost here! I want to share a few low calorie treats that taste and look like regular versions of your favorite treats. If you have been reading my blog for a while, you know I have had a huge battle with food and constantly trying to figure out what diet is right for me. I am always envious of those who can stick to a diet. Vegetarian, vegan, paleo, low carb, low fat; even raw vegans who are dedicated too just eating fruits and veggies. I don’t know if the last one would be for me but I am envious of their dedication to the diet!
I am a true foodie at heart and embrace all diets, but when it comes to a personal diet for me I really don’t have one. When I see food I like to eat if it tastes good. One thing I definitely know I am dedicated too is all natural foods and ingredients. I am a big fan of reading labels. I need to know what’s in it! I am not a fan of processed foods. If I can’t make it myself I prefer to see my food being made. Treats that are low in calories and sugar are a favorite of mine. Low calorie sugar cookies are a perfect treat for those trying to watch their weight and still have sweet treats. They are perfect if you’re planning to go to an Easter gathering and you’re in charge of the cookies. Just don’t forget the sugar-free butter icing!
Low calorie sugar cookies are pretty easy to make and there not as sweet as your traditional sugar cookie. When I first made these cookies the dough was a bit dry afterward, and when I made them a second time the dough came out perfect. If you experience the dough being a bit dry and starts to crumble add the milk if not you can leave it out. There is no need to tell anyone there low calorie! It’s are little secret!
Low Calorie Soft Sugar Cookies Recipe:
3 cups flour
½ tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cream of tarter
1 cup stevia
½ cup sugar
3 egg whites
2 tsps. vanilla
1 cup whipped butter, softened
3 tsps. almond milk (more if needed)
Sugar-Free butter icing (for decoration)
Recipe Directions: Mix dry ingredients and set aside. Cream the whipped butter and add the sugar gradually. Beat until light and foamy. Add egg whites one at time, mixing well after each addition. Stir in the vanilla. Add flour mixture gradually to the creamed mixture, stirring in by hand. If the mixture is a bit crumbly add the 3tsps. milk. Work the milk with hands until the dough is no longer crumbly. Let chill in the fridge for an hour (overnight is best). Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Roll dough out on a floured surface to 1/8 to 1/4 inch thick and cut into your favorite shapes. Place cookies onto the prepared baking sheet. Bake in the oven for 8-10 minutes. Cookies should be golden brown on the bottom. Let cool and frost with your favorite frosting.
