I finally got the courage to give my garden another go. I have always had a green thumb, so I have never had a problem with planting and growing seeds. Ever since I moved to the desert it’s much harder for my cherry tomatoes and okra plants to produce any vegetation. Last year my okra plants only produce three pods, and my tomato plants just decided they didn’t want to produce at all. I think this year we may do a lot of gardening in 5 gallon buckets and hope for the best.
I love to have mini snacks while working in the garden, and for some odd reason I am a big fan of combining foods. Donuts and muffins, pizza and sandwiches, anything with cake and ice cream; the list can go on of things I like to combine. I also want to make sure they have the simplest ingredients and are low in calories. I made two versions of these muffins, one with the dip butter and sugar and one batch without. I liked the ones without the butter and sugar and Josh preferred them with it. If you’re looking to cut even more calories from these mini donut muffins, you can skip the whip butter and sugar at the end.
Low-Fat Mini Donut Muffins Recipe:
½ cup sugar substitute (I used sucralose)
2 tbsps. sugar
¼ cup whipped butter, melted
1tsp. cinnamon
½ cup milk
½ tsp. vanilla extract
1 ½ tsps. baking powder
1 cup flour
Topping Recipe:
4 tbsps. whipped butter, melted
½ cup sugar
1 tsp. cinnamon
Recipe Directions: Preheat oven to 375 degrees. Place muffin liners in muffin tin and set aside. In a large bowl mix sugar, 1/4 cup butter until mixed. Stir in the milk, and then mix in the baking powder, flour and cinnamon until just combined. Scoop 1 heaping tbsp. of batter into prepared muffin liners. Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes. While muffins are baking, place 4 tbsps. of melted butter in a bowl. In a separate bowl, mix together 1/2 cup of sugar with the cinnamon. Remove muffins from their cups, dip each muffin in the melted butter and roll in the sugar-cinnamon mixture. Let cool and serve.
