My nesco food dehydrator finally gave out on me a few weeks ago. I was attempting to make a huge batch of kale chips and fruit leather. When I notice the leather wasn’t drying and my kale was not becoming crispy. The fan element in the dehydrator can get a bit dusty, so when I tried to clean it apparently the heating element stopped working. Now I’m in the market for a new dehydrator and looking at the Excalibur. While waiting on my new dehydrator I am doing a lot of baking. Did you know that I am a big fan of doughnuts! Even though I don’t have a doughnut pan I still love to make them. I just do it the old fashion way. They go pretty quickly in this house and I try not to eat them all, but I usually find myself eating one to many. I’m just happy they are pretty low in calories and make a tasty treat. Question of the day: What dehydrator are you using?
Low-fat Baked Doughnut Holes Recipe:
2 cups all-purpose flour (plus more for dusting)
¾ cup sugar substitute
2 tsps. baking powder
½ tsp. cinnamon
1 tsp. salt
¾ cup almond milk
3 egg whites
1 tsp. vanilla extract
2 tbsps. whipped butter (softened)
Icing:
¾ cup confectioner sugar
1 ½ tbsp. hot water
Sprinkles
Recipe Directions: Preheat oven to 325 degrees and line a baking sheet with parchment paper. In a large bowl, mix flour, sugar, baking powder, cinnamon and salt. Stir in milk, egg whites, vanilla and whipped butter. Mix together until well blended. Place on a lightly flour surface and knead for 2- 5 minutes (the dough should be moist and not to sticky). Measure out the dough in ½ -1 tablespoons and use your hands to gently roll into a ball. Place on baking sheet and place in the oven for 8-10 minutes. Allow to cool slightly. To make icing, blend confectioners’ sugar, hot water in a small bowl. Dip doughnuts in the glaze and add sprinkles.
