My etsy store is coming along really well, but I am going to need to take more photos and add new products to my shop! Did I mention I love saying I have my own shop! It sounds “very professional”. Just Kidding 🙂
Since I have been spending lots of time on my store. I have not been baking many treats. One treat I have been craving is raw chocolate chip cookie dough. I like the fact that you can grab it when your in the mood of snacking. I know I’m not the only one who can eat a tube of cookie dough mindlessly while they work. Well those days are long gone, but those cravings still hit. Having a healthier low-fat cookie dough version on hand is a bonus. I have never been a fan of chickpeas in cookie dough, and the thought gives me chills. Oats are full of fiber and make very addictive cookie dough.
Low-Fat Chocolate Chip Cookie Dough Recipe:
2 cups oat flour
1 cup sugar substitute (I used coconut sugar)
1 tsp. vanilla extract
1 cup semi-sweet chocolate chips (I used mini)
¼ cup and 2 tbsps. almond milk (more may be needed)
Recipe Directions: In a large bowl add oat flour, chocolate chips and coconut sugar. Mix until combine. Slowly add milk and vanilla extract; mix until the mixture is sticky but not wet. If it’s too dry add another table spoon of milk until the mixture is moist. Once done place cookie dough in air tight container and place in the fridge. Keeps good for 5 days.

This may sound crazy but I’ve never really had raw cookie dough (and I’m afraid to go there because I’m sure it’s ridiculously good). I have never heard of a low-fat version, that’s for sure! Good job and lovely presentation. Nice to see the good ingredients in it. And good luck with your etsy store – sounds very exciting!

Wowza, these cookies look so delicious, as I’d mentioned in my other comment, I made chocolate-chip, peanut butter, cranberry and rolled oats cookies (gluten-free and vegan) tonight and they were so tasty! Funny, I also use coconut sugar, isn’t that the best?!
