I don’t know about you but between Mardi Gras, Saint Patrick’s Day, and Easter (coming up). I am either always buying something for a holiday or always eating lots of food. I am a big fan of festive foods, but they can pack on the calories pretty quick with all that sugar and fat.
Low Fat Green Mint Crinkle cookies are a low calorie festive treat just in time for Saint Patrick ’s Day. They have a wonderful mint flavor and taste nice with a glass of vanilla almond milk. They may be low fat but they are full of flavor and all natural (no box mix in these cookies). If you would like to cut the calories even lower, you can skip the powder sugar and just place them in the oven. They will be just as sweet and minty.
Low Fat Green Mint Crinkle Cookie Recipe:
2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
½ cup whipped butter (melted)
½ cup sugar substitute (I used stevia)
¼ cup sugar
1 tsp. mint extract
1 tsp. vanilla extract
2 egg whites
4 tbsps. almond milk
Green food coloring
½ cup powder sugar
Recipe Directions: Preheat oven to 350 degrees. Line a baking sheet with parchment paper; in a medium bowl mix flour, baking powder, salt and set aside. In a large bowl cream melted butter, sugar, peppermint extract and vanilla extract. Once ingredients began to foam pour in egg white and milk; mix until combined. Add flour mixture and green food coloring to sugar mixture and stir gently until mixed. Use hands to form small balls that are about 1 inch. Coat each ball in powdered sugar before placing onto cookie sheet. Bake cookies for 10-12 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks to cool. Low Fat Green Mint crinkle cookies taste wonderful when they have completely cooled.
