Hunting season has finally come to an end! I am so happy that I get to sleep in on the weekends uninterrupted, and there won’t be any talk about tags for awhile!! I thought the season was never going to end! Josh was determined to go out almost every weekend and all I wanted to do was sleep. The season ended a few weeks ago here in AZ (probably months ago).
Josh is not a much of an eater when he goes hunting, so light and easy to carry snacks are all I made for him to take on those long walks. Muffins, breads, granola bars, anything with raisins and sweetened coconut. Country Boy cookies were one of my most requested recipes from Josh and his hunting friends. They started out with pecans, but eventually he and his buddies agreed that sweetened coconut was much better in the cookies. Country boy cookies are a great snack for that country boy always out in the field.
Country Boy Cookies Recipe:
1 ¼ cups flour
1 tsp. cinnamon
¼ tsp. baking soda
½ tsp. baking powder
½ tsp. salt
1tsp. vanilla extract
1 cup butter (softened)
½ cup sugar
½ cup brown sugar
2 large eggs, lightly beaten
2 cups semi-sweet chocolate chips
1 ½ cups rolled oats
1 cup sweetened shredded coconut
1 cup raisins
Recipe Directions: Preheat oven to 350; mix flour, cinnamon, baking soda, baking powder and salt. Use a mixer and cream butter, vanilla extract and sugar on medium speed until light and fluffy. Add eggs, and mix until fully incorporated. Add the flour mixture, and beat until combined. Using a spoon, stir in chocolate chips, oats, coconut and raisins; stir in ingredients until they have been mixed into a big dough. Scoop heaping tablespoons of dough onto a baking sheet lined with parchment paper. Bake for 10-18 minutes or until cookies are golden brown around the edges. Let cool on baking sheet for 5 minutes; remove to wire rack to cool completely.

You can try walnuts if you like. They taste good with or with out the nuts 🙂
