I know everyone is complaining about the cold weather but I have decided to just enjoy it. Soon summer will come, and you guys will read me complaining about how can it be a 108 degrees in June!? I have always been a fan of cinnamon swirl sugar bread, but not the process of making it. When I can turn my favorite bread into a quick bread you will never hear me complaining! There is no butter in this bread and instead of using coconut sugar. I decided to use regular sugar and cut it in half. The inside is moist and fluffy while the outside remains rustic!
Cinnamon swirl sugar bread is pretty light and you are not missing any of the butter in this quick bread! Although you can add a bit of butter after it’s done for extra flavor.
Cinnamon Swirl Sugar Quick Bread (Lighter Version) Recipe:
2 cups all-purpose flour
1tsp. baking powder
½ tsp. salt
¾ cup sugar
1 tbsp. cinnamon
1 cup milk (I used almond)
1 egg
6 tbsps. apple sauce
Recipe Directions: Preheat oven to 350 degrees; In a medium bowl mix dry ingredients and set aside. In a large bowl, beat together ½ cup sugar, apple sauce, and egg. Slowly add the flour mixture to the egg mixture alternating with the milk. In a small bowl, combine the cinnamon and remaining 1/4 cup sugar. Pour a third of the batter into a greased loaf pan. Sprinkle a bit of the cinnamon sugar on top of batter. Repeat the process twice. Bake for 45-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in pan.
