I will get to the bread in a minute, but I wanted to talk about laughter! I just love to giggle and burst into laughter all the time. I believe laughter is the best medicine to get over a gloomy day. If you’re having a bad day find something that makes you laugh, and most of the time you will forget about having a bad day.
What’s your favorite quick bread to make? Lately I have wanting to make them with less calories, so I am using alternative sugars and leaving out the butter and oil. I have always heard the key to a good cake or bread is to make sure it’s moist and not dry. I am a big fan of apple sauce and will put it almost any dish I can. There is nothing better than keeping the doctor away by eating a moist piece of apple sauce oat bread.
Apple Sauce and Oat Bread
1 cup oat flour
¾ cup all-purpose flour
½ tsp salt
2 tsps. baking powder
1tsp. vanilla extract
1 egg
1 cup coconut sugar
1 tsp. vanilla extract
¾ cup apple sauce
½ cup milk
Recipe Directions: Preheat oven to 350 degrees. Grease loaf pan and set aside; in a medium bowl mix dry ingredients until combined. In a large bowl add egg, coconut sugar, vanilla extract, and applesauce. Mix until all the ingredients form a smooth batter. Add dry ingredients to wet ingredients and mix until combined. Slowly stir milk into batter until smooth. Pour batter into loaf pan and place in the oven for 1 hour or a tooth pick inserted in the middle of loaf comes out clean.

Apple sauce is a great way to keep breads moist! My favorite is certainly banana though…apple would be a close second!

I’ve never made bread before but I would love to make one such as rye or sourdough, anything sour! The bread looks perfect, have you tried a vegan bread recipe before, if so, how did it turn out?

I just made this and am snacking on some as I write this right now!
I LOVE the flavor and texture of this bread. Nice and moist, with subtle sweetness. I used only 1/2 cup sugar and used 5 tbs of honey. I also added chopped walnuts for added crunch, and it goes so well! The only thing is that my bread hardly rose at all, and is still quite thin. But I would still make this again 🙂
