Mushroom Rice Pilaf
Mushroom Rice Pilaf! We decided to go and get boba this weekend and I should have asked for a dairy free drink; I was so excited to get boba that I forgot to ask for no dairy.
Unfortunately that smoothie and the yogurt I had in my green smoothie the next morning did not agree with me. So far I have had way too much Benadryl, there is tissue all over the house, and Josh is acting like the dairy police ( yellow tape on all things dairy)…
I guess my smoothies will be yogurt free until my allergies are under control. I find myself using more brown rice then I do white rice; brown rice does take a little bit longer to cook and my taste buds just enjoy it more. If you’re not a fan of brown rice, you can use white rice to make this dish.
I have just been using it for so long it comes natural to me. Mushroom rice pilaf is a side dish I have been making with most of my main courses. This dish will compliment any meal that you’re serving.
Mushroom Rice Pilaf Recipe:
½ tbsp. olive oil
1 small onion (diced)
6 large mushrooms (chopped)
¾ cup brown rice
1 ¾ cups vegetable broth (I used low sodium)
Salt and pepper (to taste)
Recipe Directions: On medium heat add oil in a small sauce pan and onions; let onions cook until translucent. Add mushrooms to the pot stirring occasionally, about 5 minutes. Stir in rice and let it cook for 3 minutes.
Stir in vegetable broth, add salt a peeper and cover with lid; reduce heat to low and let cook for 25-50 minutes or until the rice is tender.

Yum, I love rice pilaf and this looks so tasty with all the mushrooms and onions! The brown rice sounds wonderful in here too 🙂

I was watching Pioneer Woman about a month ago and she made this mouth-watering mushroom rice pilaf and I haven’t been able to stop thinking about it. Yet to make it but I will – your delicious reminder will do the trick. It looks amazing! And I hadn’t thought to use brown rice, which is what I mostly cook anyway.

Yummmm! Mushrooms & Brown Rice! Love them together! Dairy-free Boba drinks are pretty hard to get; some powders contain whey or milk protein. I stopped drinking them when I became a vegan! You can also make it yourself 🙂 I’m so sorry to hear about your experience, I hope you feel better!

Great recipe! I just made it and it is easy and delicious. Took me closer to an hour to get the rice nice and tender on low heat.

I honestly don’t know. I made this recipe a while ago, but you could use about a cup the mushrooms will shrink 🙂

one somewhat crucial piece of information was left out…is it cooked or uncooked brown rice?

Actually I didn’t leave it out the recipe.. From the photos and the well written recipe you can tell I used uncooked rice :). I use the words cook until the rice is tender hope that helps… 🙂

You were incredibly off on the timing of cooking the rice. Takes much longer than 25 minutes! Delicious but I was disappointed as I ended up not being able to even try it until 40 minutes after I had finished the rest of my dinner.

When I made it a year ago and tested a few times after it was perfect at 25 minutes with a lid on.. I’m sorry that the timing was off for you.. Nonetheless I’m happy you enjoyed the recipe :)..
