Broccoli and onion rice medley is one of my favorite side dishes to make. I am not really into side dishes but I can eat this one every day during the week.
Adding veggies to rice is a good way to get more veggies into your diet. They add more flavors, and if you are not a fan of vegetables it is much easier to eat them when you add them to grains and meats. What are some of your favorite side dishes?
Broccoli and Onion Rice Medley Recipe:
2tsps. olive oil
2 celery stalks (diced)
1 small onion (diced)
1 garlic clove (minced)
1.5 cups frozen broccoli
¾ cups rice (I used brown)
2 cups chicken broth (I used low sodium)
Salt and pepper to taste
Recipe Directions: In a small sauce pan heat oil. On medium heat add onion, celery, and garlic. Sauté onion until translucent; stir in broccoli (if your adding salt and pepper add it in with the broccoli) and cook for 2-5 minutes or until broccoli is tender. Add chicken broth and rice and bring to a boil. Cover with a lid and reduce to low heat; let simmer for 20 minutes, or until rice is tender and broth has been absorbed.
