Pushing my-self to get out of bed and work out is a struggle when the sun is not out, so I have been planning my workouts around the things I enjoy. That way I look forward to getting up when it’s completely dark. I am not a big fan of running and the list goes on of exercise that I can’t really understand! Since I have a huge obsession with yoga and dancing; I like to do them more often then aerobic exercises.
I usually forget the time when I am practicing yoga, so on days like that I have a few eats made ahead. Cranberry oat muffins make a perfect breakfast on the go with a few boil eggs. I also like to eat them as late snack when I am all out of options. These muffins are sugar and butter free so eat up!
Cranberry Oat Muffins (Sugar Free) Recipe:
1 ½ cups flour
½ cup oats
¼ tsp. salt
1 tsp. cinnamon
2 tsps. baking powder
3 egg whites
1 egg
1 cup coconut sugar
½ cup milk (I used almond)
1 cup cranberries
1 large banana (puree)
2 stevia packets
Recipe Directions: Preheat oven to 350 degrees. In a small bowl mix two packets of stevia with cranberries; sift dry ingredients and set aside. In a large bowl mix eggs, coconut sugar, milk and banana puree until the mixture is smooth. Mix dry and wet ingredients until the batter has formed; fold cranberries into the batter. Line a muffin tin with cupcake liners and place 1-2 heaping tablespoons of dough in each liner. Place in the oven for 30 minutes or until a tooth pick stuck in the center of the muffin comes out clean.

What a perfect snack to fuel you up before or after a work out. These muffins sound awesome with the coconut sugar and cranberries. I have days where I find it tough to get motivated for a work out too but yoga always seems to help me relax and get going too 🙂
