I wanted to call them scones, but Josh kept telling me he wanted more cranberry biscuits and after a while the name just stuck with me. Scones sound much better than biscuits do, and in most cases they are made the same way. I know many will argue this fact with me, so whatever you call them they are delicious.
Fresh cranberries have definitely been one of the foods that I bought way too much of during the season. It may be just as worse as my blueberry extravaganza during the summer. Before they go bad I want to use them all up. I’m not one that likes to waist things.
I had a few projects for the cranberries, but I never got to them so now I’m adding them to all my baked goods. Fresh cranberries are always the best..
Fresh Cranberry Biscuits Recipe:
2 cups all-purpose flour (plus more for dusting)
1 tbsp. baking powder
¼ tsp. salt
1 tsp. cinnamon
¼ cup sugar
¼ cup butter (chilled)
3 tbsps. brown sugar
½ cup and 2 tbsps. milk (I used almond)
1 tsp vanilla
¾ cup cranberries (chopped)
Recipe Directions: Preheat oven to 400 degrees. Line a baking sheet with parchment paper; in a small bowl mix cranberries and brown sugar and set aside. In a large bowl mix dry ingredients; with a fork combined chilled butter into flour mixture until the mixture resembles coarse crumbs. Stir in cranberries and add milk to the flour mixture; place mixture on a floured surface and knead until the dough is no longer moist. Work dough into a rectangle shape and use a medium circle cookie cutter to cut dough into biscuits. Place biscuits on baking sheet and place into the oven. They should bake for 10- 15 minutes or until golden brown on the bottom. Let cool completely on a wire rack. Once done serve with warm tea.
