The day after Christmas can turn into chaos for me; especially when I realize how much cleaning I half to do after everyone has left. This year I thought it was going to be just the two of us. It would have been the first year we spent the holidays together but of course I was wrong. My sister came to visit us for a few days; I am so happy and grateful she came to see me. We did a lot of baking and she took almost all my cranberry jam thumbprints with her.
I normally don’t put jam in thumbprint cookies (I like to fill them with caramel). These little cookies were tasty and made a great gift.
Cranberry Jam Thumbprint Recipe:
1 ¾ cups flour
¾ cup butter (soften)
1 tsp. vanilla extract
1 egg
½ cup sugar
½ cup cranberry jam
¼ tsp. salt (optional)
Recipe Directions: Preheat oven to 350 degrees and line a baking sheet with parchment paper. Cream butter, sugar, vanilla extract and egg in a large bowl. Add flour and salt to the bowl and mix until the mixture forms a soft dough. Form dough into 1 inch balls, place dough balls on baking sheet. Press thumb into middle of cookie and make a well, add 1 tsp of cranberry jam to each cookie. Place cookies in oven and bake for 8-10 minutes. Let cool and serve with warm milk.
