There is only one jar of peanut butter and co peanut butter left and I decided to create a simple cookie recipe with it. Mighty Maple is the name and oatmeal maple peanut butter cookies are going to be made. This is a pretty easy recipe that is allergy and diet friendly. If you have a gluten allergy you can substitute oat flour with gluten free oat flour. I love cookies especially healthy ones and these taste nothing like “cardboard”. Even though I am not a fan of photographing cookies. I love to bake them and eat them. Who would have known peanut butter and maple syrup make a better combination than sugar and peanut butter.If your a big fan of healthy cookies you will enjoy the hint of maple flavor that these cookie have. Not a heavy cookie at all and baking time is pretty quick, so make sure you keep an eye on these yummy cookies as your baking them.
Oatmeal Maple Peanut Butter Cookies Recipe:
1 cup Oat flour
1 cup Mighty Maple peanut butter
½ cup maple syrup
1 egg
½ tsp. baking soda
¼ tsp. salt
Recipe Directions: Preheat oven to 350 degrees. Sift dry ingredients and set aside. In a large bowl cream maple syrup, peanut butter, and eggs until combined and add dry ingredients to the bowl.
Mix the batter and place a tablespoon of dough on a cookie sheet lined with parchment paper. Use a fork to press the cookie dough down forming a cross pattern. Place in the oven for 5-10 minutes. Make sure you keep in eye on these cookies they get done pretty quickly; let cool on a wire rack and serve with a nice glass of milk.

Ooh! These look awesome. I’ll almost always opt for the super unhealthy oil-and-sugar-laden cookies, but peanut butter and maple change everything! They look soft and chewy, and that’s my favorite peanut butter! The possibilities are endless with their flavors.
