I just finally realized time changed! I have no clue when it happen but it did! The revelation came when I was listening to my favorite radio station in L.A. They kept saying 8:55 and I kept looking at my clock, wondering why they were saying 8:55 when it was almost 10. That’s when I realized everyone fell back and since time does not change in AZ I had no clue!
Thanksgiving is almost here, so now I’m saving the calories for the big day! Most of my meals are simple and on the lighter side; I am either using coconut sugar or not adding a lot of sugar when baking (saving as many calories as I can). This year it will be just the two of us and although I have not prepared a menu yet. I am still thinking about all the food I want to make and eat.
Lately pumpkin has been every where and you just can’t get away from it. One of my coworkers gave me some pumpkin butter, and I have been dipping it in almost everything! It seems right to turn it into a sweet treat that is not only yummy but also on the lighter side.
Pumpkin Butter Crumble Bars Recipe:
1.5 cups oat flour
½ stick butter
½ tsp. salt
1 tsp. baking soda
1tbsp. sugar (I used raw sugar)
2 tbsps. milk ( I used coconut)
2 cups pumpkin butter
2 tsps. cinnamon
½ cup powder sugar
2 tbsps. ground flax seeds (optional)
Recipe Directions: Preheat oven to 350 degrees and grease an 8*8 baking dish and set aside. In a medium bowl sift oat flour, raw sugar, salt and baking soda. Mix butter into dry ingredients until the butter has crumbled the mixture, add milk and mix until it becomes a dough.
Place more than half the dough in the baking dish covering the sides and place in the oven for 5 minutes. In a large bowl place pumpkin butter, sugar, cinnamon and flax seeds; mix until there are no longer clumps of sugar in the pumpkin butter. Crumble the rest of the dough on top of the pumpkin butter and bake for 10-20 minutes. Once cool cut into squares and serve with vanilla ice-cream or peppermint tea.

Yum! These bars look even better than a big slice of pumpkin pie (and coming from me that means a lot!) I wish we didn’t have time change. It wreaks havoc on babies!

Time changing back always throws me off, especially when I forget to change a clock and then I don’t know which one is right. One thing I know though is these crumble bars are out of control amazing!

These pumpkin bars look fabulous and I love that you made them healthy! I still haven’t changed my bedside clock to the new time. I’ve gotten so good at remembering that it’s 1 hour ahead, I’m worried if I change it, I’ll still think it’s 1 hour ahead!

These look divine! A question about pumpkin butter: we don’t have that in any of our shops – could I sub it for normal pumpkin puree mixed maybe with some form of binder? nom nom!

You can but the pumpkin puree should be nice and thick 🙂
