When I moved to Arizona I really thought the climate was just one big desert; being in Flagstaff was like being in a different state, the air was cool, crisp and the fall colors were beautiful.Living in the city you rarely see leaves change colors, and living in the suburbs in the desert the leaves just stay the same unless they fall off the trees. Josh laughed at me the whole time as my eyes got big from seeing so many pretty colors. I wish they had more trees with leaves then pine tress I would have defiantly played with the leaves. I decided I may half to start calling Josh my mountain man instead of my country boy; he wanted to get lost in the mountains chopping wood; he felt right at home in Flagstaff.
Besides my love for hot and spicy seaweed chips I am obsessed with making all are snacks when we go on a road trip. We ended up enjoying this lovely Banana Chocolate Chip Quinoa Bread that I made before we headed on the road. The cooked quinoa made this bread much lighter and moist. Josh is not a fan of quinoa so I am sneaking it into whatever I make and he never notices. Nice hot tea from your favorite coffee shop and this bread makes a perfect fall snack.
Banana Chocolate Chip Quinoa Bread Recipe:
1 cup whole wheat flour
1 cup quinoa (cooked)
½ cup sugar
2 large bananas (smashed)
¾ cup chocolate chips
1 egg
1 tsp. vanilla
½ tsp. baking soda
½ tsp. salt
Recipe Directions: Preheat oven to 375 degrees; in small bowl sift dry ingredients and set aside. In a large bowl placed smashed bananas, sugar, eggs and vanilla and mix until creamy. Slowly add dry ingredients and quiona to the batter and mix. Fold chocolate chips into batter. Place batter into a medium greased loaf pan and place in the oven for 30-45 minutes. Use a toothpick to stick in the center of the bread; if the tooth pick comes out clean the bread is done

Love the quinoa idea and just made a loaf. The flavor is good, but I am going to experiment a bit and see if I can add a bit more “rise” to the loaf. The quinoa makes the bread dense, I tend to like a bit more lightness. I’ll certainly have fun taste testing!

This recipe looks fantastic! Could I replace the wheat flour with quinoa flour? I’m on a very strict elimination diet and quinoa is pretty much the only grain I can have.
Also, can I replace the egg with applesauce? Can’t have eggs on my diet either 🙁
I’m excited to try this, it would be such a treat for me.

Just found your post and immediately made these but now I’m not sure if I should leave the container on the counter to be stored or in the refrigerator? Thanks for the recipe they are amazing but would recommend cinnamon:D

Great recipe, I used only have the sugar, added a mixture of half chocolate chips and chopped dates for added sweetness. After reading comments that it was dense I literally stirred in 1/2 tsp of baking powder after I had it in the pan, next time I may add a bit more.
