Did you know quinoa is lower in calories then brown rice? What a pretty interesting way to cut a few calories out of your diet by swapping grains.
I love making fried rice it has to be the easiest dish to make and one of my favorites. I decided to swap rice with quinoa and it turned out great. Shrimp fried quinoa was moist from the soy sauce and it was not as dry as fried rice would be.
The best thing about eating this dish you will not half to wait an hour for your meal to come. You can make this flavorful dish in less than 20 minutes, no need for leftover quinoa. If youโre on a budget this is a dish that will cost you less time and money then take out fried rice would.
Shrimp Fried Quinoa Recipe:
3 eggs (fried)
1 medium onion (optional)
2 cups quinoa (cooked)
2 cups medium shrimp (frozen)
1.5 cups peas and carrots (frozen)
ยผ cup soy sauce
2 tbsp. sesame seed oil
Recipe Directions: On medium to high heat place sesame seed oil in a skillet and let warm up. Chop up onion and place into skillet, sautรฉ onions until they become translucent.
Add quinoa and frozen veggies to the skillet and cook for 5 minutes, stir in the shrimp and cook until the shrimp turn pink (about 3 minutes). Add the egg and cook the mixture for 3 minutes. Add soy sauce, cooking for another 3 minutes.
Serve while hot and add your favorite condiments on the side.

With the 2 cups of quinoa you will have plenty for a family of 4. In make this 2x now it’s plenty. :).
