This weekend my employer had a chef give us a beautiful cooking demonstration on quinoa and why we should incorporate it in our diet. Now I’m a foodie and of course I know a lot about quinoa. I have a bag of it in the freezer and I have only used it about twice. Dr. Oz said it was good for me so I decided to buy it. That’s mainly how I ended up with a big bag of quinoa in my freezer. However I can recall making these burgers and they were delicious. I also used quinoa in a few other dishes but the bag just got put in the freezer. I had forgotten about it until Saturday when I seen how quinoa can be used in so many ways..
Sesame Carrot and Red Cabbage Stir Fry is a simple dish that I love to eat when I want a quick meal that takes less than 20 minutes and healthy too. I love this dish because it reminds me of a healthier version of Chinese food without all the salt and oil. This dish is very versatile it can be a side or main dish.
Tonight we decided to have it as or main dish; I added grilled chicken to country boys, he was not going to eat it without any meat. No matter how much I told him that quinoa had more protein then meat he was not going for it. I choose to have mine meat free and enjoyed the nutty notes of the dish.
Sesame Carrot and Red Cabbage Stir Fry Recipe:
3 large carrots, peeled
1 small red cabbage (about 2.5 cups)
1 small onion (chopped)
1 garlic clove (chopped)
2 tbsp. sesame seeds
2 tbsp. sesame oil
¼ cup soy sauce
Pinch of chili flakes
Salt to taste
1 cup cooked quiona (to serve)
Recipe Directions: On low to medium heat place a skillet with sesame oil, seeds, onion, garlic and pinch of chili flakes. Sauté until onions are translucent; add carrots and cabbage and sauté for five minutes.Add soy sauce and let simmer for five minutes. One done serve over quiona.

This sounds wonderful! My husband is the same way – it’s not a meal unless it has some sort of meat in it!! I love quinoa – it’s one of the few healthy foods that I think tastes really good 🙂

Ooh! I love cabbage and carrots. In fact, I often make bowls of cabbage in the winter (my hubby thinks I’m crazy!) He, however, loves Asian food so perhaps I could sway him with a bowl of this stir-fry. Thank you for sharing!

Quinoa is my favorite! I love it with anything else from cilantro tahini dressing to harissa. You can even make a harissa quinoa dish! The carrot & red cabbage stir-fry looks pretty tasty, I’ve never fried red cabbage before.

I made this for dinner tonight. Didn’t have enough quinoa so used brown rice (trader joes frozen…great product). Added tempeh for protein which I had never tried before but liked. Delicious dish, everyone liked it. Thanks!
