Josh is going fishing Saturday with all his buddies! I know he is excited to finally be able to find some good fishing spots. Since we have been in AZ, he has been complaining about there not being any good fishing and hunting spots to go. All that changed once he met his new co-workers ( who know all the good spots) he has been ”trying” to go fishing every weekend! I know he will be gone the whole day; so I am getting started early on making him and his buddies a few goodies before he waits until Friday to ask me.
I made this Peanut butter banana bread as breakfast/snack when we went fishing. Why not make it again! Lucky for me I have more than enough bananas that needed to go before they go bad.
The flavor of this bread is bursting with peanut butter and bananas; I used pumpkin puree to balance the sugar that I added, it’s a very hearty bread that will keep you full especially for those long fishing and road trips. If you are going on a fishing trip make sure you try this peanut butter banana bread. It is a great way to start your day and have as a snack for when the Cat and Bass are hot!.
Peanut Butter Banana Bread Recipe:
1 cup Peanut butter ( I used all natural)
1 cup sugar
2 eggs
3 bananas (smashed)
1 tsp. vanilla
1 cup Pumpkin Puree
1 ½ cup flour
1 tsp. baking soda
½ tsp. salt
Recipe Directions: Preheat oven to 375 degrees, grease two medium loaf pans and set aside. In a medium bowl sift flour, salt and baking soda and set aside. In a large bowl cream sugar, peanut butter and eggs; add smashed bananas, pumpkin puree and vanilla to the mixture.
Fold the dry ingredients into the wet making sure all the dry ingredients are mixed into the batter. Place Batter into grease loaf pans and place in the oven.
The breads should bake for 30-55 minutes; once done let cool completely, pop out of the loaf pans and store.

I love making banana bread and we always have extra banana around our house. Love the way the sliced banana looks on top of you bread and that you added some pumpkin.
