Pumpkin is finally here and I’m getting excited about all the pumpkin patches. I’m looking forward to picking out a pumpkin and attempting to carve it (again). Pumpkins are not my expertise (neither is crocheting), they require a lot of patience. Lets just hope the pumpkin will not end up being smashed before getting carved.
Carving a pumpkin may be frustrating but when it comes to cooking pumpkin; I can make some great pumpkin dishes. Cooking with pumpkin can provide so much variety to a dish. Now if persimmons would just come in season already my fall would be complete.
Pumpkin roasted fries go great with ketchup and can replace those potatoes if you are on a low carb diet. They go great with any seasoning.I used a garlic and herb. I’m working on a sweet ginger spice to put on these fries and will defiantly keep you up dated.
Roasted Pumpkin Fries Recipe:
1 mini pumpkin
1 tsp. garlic and herb seasoning
½ tsp. salt
1 tbsp. olive oil
Recipe Directions: Preheat oven to 350 degrees. Skin and cut up pumpkin into thin strips; place pumpkin strips into a bowl with garlic seasoning, salt and oil. Coating the pumpkin strips with spices and oil; place on a well-oiled baking sheet or parchment paper. Roast pumpkin fries for 10-15 minutes or until tender in the middle. Turn up the oven to 400 degrees and broil pumpkin fries for 3-5 minutes or until crispy.

This is just what I was looking for. Maybe I will do some on the side with sugar and cinnamon. Thanks for the recipe. I wouldn’t have known about the broiling at the end trick!

Yes! I made this and it was so yummy! The cinnamon and sugar ones were delicious too.

I have never tried them in the microwave, so I don’t know the exact time frame but you should try it and let me know how they turn out 🙂

I baked them and then put the oven on broil to get them crispy…
