I hope you did not throw that pulp away! I am not one throw something away( if I can make good use of it) especially when food is involved. I like to save sugar cookie scrap, dough that never got used, fruit and veggie pulp or puree; which are my favorites. I was taught as a little girl not to throw stuff away before I have made good use of it. I may have turned into a pack-rat, in the process of trying to make good use of all the things I have not put to good use (if that makes since).
I love using leftover puree to make a simple quick bread; I love my carbs and they are always on my mind (pancakes please). This bread had a hint of lime. The blackberry seeds are defiantly in the bread; if you have any leftover puree I would encourage you to make a quick bread instead of throwing it away. Perfect excuse to eat bread!
Leftover Puree Quick Bread Recipe:
• 1 1/2 flour
• ¼ cup puree
• ¾ cup sugar
• 1 tsp. lime juice
• 1 stick butter (softened)
• ½ tsp. salt
• ½ tsp. baking soda
• 2 eggs
Recipe Directions: Preheat oven to 350 degrees, butter a loaf pan and set aside. In a large bowl mix butter, leftover puree and sugar; slowly add eggs and lime juice and mix. In a separate bowl sift flour, baking soda and salt. Mix dry ingredients into the wet ingredients. Once done place mixture into a buttered loaf pan and place in the oven. Bread should bake for 20-30 minutes or stick a tooth pick in the loaf , if it comes out clean the bread is done.
