Sweet salty nuts with a just a hint of ale makes this a wonderful flavor. This is not your average beer nut I can tell you that! I am not a fan of how sweet beer nuts can be (numb tongues! I tell ya!) but when you combine them with ale! Oh man you will be hooked. The yeast in the beer eats most of the sugar leaving you with gooey caramel nuts that form clusters with a major crunch.
I decided to start this trend last football season and they were a hit. Let me tell you how I eventually decided to add beer and not water to beer nuts. Most of you may not know this but country boy’s love there beer; and during football season they go extremely crazy over it. I usually find myself making a lot of beer nuts during football season. Last year I caught Josh adding beer to a pot of beer nuts I was making; he thought it was a joke (I think he was kind of tipsy) but I can take my cooking very serious sometimes. I wanted to kill him since (my looks of death were enough) stirring took longer than it should have; but the outcome was wonderful. I decided to skip the water and bring on the beer and now you have actual beer nuts that are not too sweet (no numb tongues) but just right.
Beer Glazed Nuts Recipe:
- 2 cups Raw Almonds
- 2 cups Raw Peanuts
- 2 cups White Sugar
- 1 cup Beer
- 1 tsp. salt
- Pinch of salt
Recipe Directions: Preheat oven to 300 degrees and line a baking sheet with parchment paper. In a medium to large pot place nuts, sugar, ½ tsp. salt and beer. Place pot on high heat and stir until the mixture comes to a boil. Once it comes to a boil turn down the heat to medium and stir (this process will take about 10-20 minutes); until the syrup is almost dissolve (the syrup should be an inch to half-inch from the pot), once it is almost done sprinkle another ½ tsp. of salt and stir. Place nuts on baking sheet and spread with a rubber spatula, place in the oven for 10 minutes. Take nuts out and add pinch of salt and stir nuts with rubber spatula and place in oven for another 10 minutes. Once done let cool and separate nuts and let them cool. Place in airtight container and store in a cool dry place.
Recipe Notes: I think any beer will work for the nuts; there is no difference in the taste of the nuts to me. I tried redds apple ale and of course budlight budweiser and I can tell you I got the same great taste. Maybe if I was blindfolded there would be a difference.I suggest you try your favorite beers and let me know what you think.
