These Chewy Blueberry Granola Bites made my day and I felt as if I could conquer the world. I hope this post does not become an advertisement for the bites. However Chewy Blueberry Granola Bites were soft on the inside and crunchy on the outside; with an essence of dried blueberries. I must tell you they are the best. Let me stop my advertisement for them and let’s talk.
I have no clue if it’s just me (yeah it’s just me) but I have been losing my creative edge so I decided to take a photography class this year. The only problem I photograph food not pictures of me; so when my teacher told us we needed to take pictures full body, waist up, hands, toes, etc…. I rolled my eyes and said oh here we go my worst fear coming true. Then he begins to tell us nudity was ok to a “certain” degree. My jaw almost dropped! I am not really looking forward to taking pictures of me let alone my body parts. I am defiantly not doing it nude! I am not a quitter (however I want to so bad) so I am going to push through and hope to break out of my comfort zone. I am not excited but I am looking to expand my photography because being an artist is sometimes complicated. Thank heavens for these little bites because they made my day.

Chewy Blueberry Granola Bites Recipe:
- 2 ¾ cups rolled oats
- ¼ cup sesame seeds
- ¼ cup coconut oil
- ¾ cup smooth peanut butter
- ¾ cup honey
- 1 cup dried blueberries (any dried fruit will do)
Recipe Directions: Preheat oven to 350 degrees; place rolled oats, sesame seeds in a bowl and mix with oil until well coated. Place on a cookie sheet until the oats turn a golden brown color. On low to medium heat place peanut butter and honey in a sauce pan and warm it up for about 2-3 minutes or until the mixture begins to bubble. While the mixture is cooling place oats into a mixing bowl. Once the oats and peanut butter honey mixture have cooled; place the mixture over the oats and stir in dried fruit with a spoon. Form into mini balls with 1-2 tablespoons of dough. The mixture makes about 24 medium balls.
