When the cookies finally cooled down; I ate one, Josh ate One, I had one more, Josh had another; I ate another one and Josh had another one. I had my fourth and last cookie. Josh ate his fourth one and four more after. Blueberry White chocolate chip cookies are very, very addictive; after the fourth one I knew I had to hide the cookies quick ( after josh decided to sneak four more). They are soft chewy and moist and the dried blueberries give these cookies a wonderful flavor.
I did not know dried blueberries would do amazing in baked goods. This is my first time trying dried blueberries in baked goods. They are pretty simple to work with, and you will get less of a mess then you would with fresh blueberries. I am looking forward to doing a lot of recipes with dried blueberries, especially since summer is almost over and I want to stock up on blueberries before they’re gone.
Blueberry White Chocolate Chip Cookies Recipe:
- 2 cups ¼ all-purpose flour
- 1 tsp. baking soda
- ½ tsp. salt
- 2 sticks butter (softened)
- ¾ cup brown sugar
- ¾ cup white sugar
- 1 tsp. vanilla extract
- 1 cup white chocolate chips
- 1 cup dried blueberries
- 2 medium eggs
Recipe Directions: Preheat oven to 375 degrees. Sift flour, salt, and baking soda in a bowl and set aside. Use an electrical mixer ( I used hand) and beat butter and sugar on medium speed until fluffy. Add eggs and vanilla extract and beat until blended. Slowly pour dry ingredients into mixture and beat until well mixed. Fold in white chocolate chips and dried blueberries. Place parchment paper on baking sheet and scoop heaping tablespoons of dough onto baking sheet. Bake for 10 minutes or until edges are lightly brown.
