I love eating wraps especially in this weather and now when I know I am going to have a hectic Monday. I am looking forward to this weekend because it is tomato season and it is time to get some fresh tomatoes ( tomato pie anyone!!?). I have a few recipes up my sleeve; I am saving all my energy for the recipes ahead. This week I will be doing lots of wraps and one pot meals to tie me over until I get some tomatoes!!! The buffalo chicken salad wrap recipe is so easy; all you gotta do is throw some chicken breast in the oven bake it until golden brown or until it reaches a temperature of 165 in the middle. Set the chicken aside and let it cool.
Chop up some lettuce, cucumber and bell pepper, once the chicken has cool chop up the chicken. Place chicken, lettuce, cucumber and bell pepper in a bowl and add buffalo sauce. Make sure the chicken salad is well coated with buffalo sauce and add to the wrap.
Buffalo Chicken Salad Wraps Recipe:
- 16 ounces of chopped cooked chicken
- 1 large cucumber cut up
- 2 whole bell peppers roasted and cut up
- 3 cups chopped romaine lettuce
- 1/4 cup and 3 tablespoons of buffalo sauce
- 4 flour tortillas
Recipe directions: add cooked chicken, cucumber, bell pepper, and lettuce to a bowl and mix well. add buffalo sauce and mix until well coated add to a wrap and serve.
