Have you ever had a great recipe for “cookies”. You wrote and misplaced the recipe, looked everywhere for the recipe and could not find it. Leaving the house a mess and your brain warped. When you finally have time to recreate the recipe all the key ingredients (sugar) are gone and most of the stores are closed so you half to improvise. Well this is what happened with the chunky chocolate cookies. I had to recreate another recipe which took a few hours, but it was worth it because the Chunky Chocolate Cookie recipe turned out great!
I never tried coconut sugar in cookies before, that being said I thought the cookies would turn out horrible; but it was not as bad as I thought it would be! The cookies had more of a strong caramel flavor then brown sugar would have. I am happy to have used coconut sugar because I did not want to use it! I thought it would have been a challenge (it was) that I just would have a hard time with. The taste was incredible! They were soft and chewy, like a chocolate pillow in your mouth; they were not too sweet and you could taste more of the chocolate in the cookies.
The best part coconut sugar has half the calories of regular sugar, I think it was a pretty good swap for a yummy cookie recipe. If you are looking for a great cookie recipe with half the calories and the same great flavors; the Chunky Chocolate Cookies would be a great recipe. Chunky Chocolate Cookies Recipe:
- 2 1/4 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup softened butter
- 1 1/2 cup coconut sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 cup chopped baking milk chocolate
Chunky Chocolate Cookies Recipe Directions:
- Preheat oven 350 degrees
- Mix flour, baking soda, and salt in a medium bowl and set aside
- Cream butter sugar, eggs and vanilla extract until creamy
- Add the dry ingredients to the wet ingredients and mix
- Fold in the chopped chocolate into the batter, scoop with an ice cream scoop or tablespoon the dough onto a parchment lined baking sheet
- Place in the oven and let bake for 10-15 minutes or until the edges are golden brown

Thank you 20 calories for a tablespoon of coconut sugar is way better then 60 calories for regular 🙂

I have been baking with coconut sugar for years. It is lower on glycemic index and healthier for you than white refined sugar. The ratio for baking is 1:1 so no calculations are needed! Swap out the white sugar for this and you are good to go in all recipes! It is dark in color like brown sugar (and no does not taste like coconut) so I would not recommend for sugar cookies since they will not be the traditional cream color you are used to.
