I love banana bread, this recipe has been passed down from one girl to another in or family; of course I forgot the recipe so I called my sister. I asked her did she remember the recipe for banana bread with coconut in it, she had no clue what I was talking about. That conversation took about an hour, of course me complaining about how she could forget such an important recipe like that.
I finally decided to call my grandma; well that conversation took an hour about how I should bake it. Then she told me why it is better to mix all your dry ingredients before adding them into the wet; instead of just adding all the dry ingredients to the wet (my style). It is too hot for this bread to go in the oven so I decided to use the crock pot. I was happy the whole house smelled like banana bread.
Coconut Banana Bread (Crock-pot Style)
Recipe:
- 1/2 cup sugar
- 1/2 cup margarine
- 4 bananas
- 1 tsp coconut extract
- 2 eggs
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup white flour
- 1/2 cup whole wheat flour
- 3/4 cup shredded coconut
Instructions:
- Preheat crock pot without the the ceramic bowl inside.
- Place margarine, bananas, and sugar into bowl and mix together with mixer; mix in coconut extract and eggs to the mixture.
- In a separate bowl add flour, salt, baking powder and mix together.
- Dump the dry ingredients into the wet ingredients and mix together; once done add the coconut.
- Pour mixture into well greased ceramic bowl and place inside crock pot until done.
- Let cool and serve
Recipe Notes:
The bread is done in about three hours, but I left it in longer because I like my bread to look brown on the top. I also kept the crock pot on low for two hours and high for another two hours. If you want to just keep it on low it may take a while but it will be done just be careful not to burn the bottom of the bread.
