I love peanuts, every time I go to a store I am running to the section where the fats are and buying jars and bags of nuts. The great thing about this recipe is it combines a girl’s favorite foods; peanut butter and chocolate. One of the best combinations in the world; it also is low in carbs.
Chocolate Peanut Butter Balls (Low Carb)
Recipe:
- 1 cup roasted peanuts
- 4 packets NuNatrals low carb stevia
- 1/4 cup ( 4 squares) unsweetened chocolate
- 2 1/2 tsp honey
Directions:
For Peanut butter Balls
- Place peanuts into food processor and blend until peanuts become began to crumble, add stevia and honey to the peanuts
- Blend for 30 seconds until the dough becomes sticky, roll the dough into balls
For Chocolate Sauce
- Place four squares of unsweetened chocolate into the microwave for 40 seconds
- Once chocolate has melted add no carb stevia packets to the chocolate and mix together
- Put chocolate sauce back in the microwave for 30 seconds
- Place peanut butter balls into the chocolate and coat very well
- Let sit in the fridge until the chocolate sets, and enjoy
Notes: For this recipe I did a few variations for the batter; the batter will stick together with honey, you can add stevia, coconut sugar, or more honey to the batter (for flavor). I added NuNaturals no carb stevia to keep carbs low. I used unsweetened chocolate and more nor carb stevia (keeping carbs low); if you do not want to keep carbs low in your chocolate; milk or dark chocolate for this recipe as an option.

These look awesome! I was just wondering if you have any recommendations other than honey. I’m not allowed to do honey or sugar on the food plan I’m doing. The stevia is no problem. Any suggestions?

Agave nectar is very low on the glycerin scale. Found in most grocery stores with other alternative sweetners. All natural and very sweet.

If your recipes were calculated with calories, carbs, fiber, protein & fat, your following would increase massively. Your style is great and you haven’t over loaded on ads.
